Garlic scapes are the flowering stems of a garlic plant that are harvested by hand in June to encourage the garlic bulbs to grow larger. Scapes are an underused seasonal delicacy that has a beautiful light garlic flavor with leek, chive, and onion undertones. When used raw, scapes are best chopped up finely to add to salads, dips, dressings, or marinades or pureed to make pestos. However the possibilities are endless: sauté in stir-fries, add to soups, stews, pasta, potatoes, and egg dishes.
