Wildfire is a standout member of the Asiatic garlic family, prized by growers and cooks for its bold flavor and striking appearance. Each bulb produces an average of 5 large, easy-to-peel cloves wrapped in sturdy skins tinted deep purple and tan.
True to its Asiatic heritage, Wildfire brings a spicy-sweet, earthy flavor with heat that ranges from medium to fiery — mellowing into something rounder and sweeter once cooked. It's one of the earliest garlics to sprout each fall, and its wide, pliable leaves can be braided for storage, a rare trait among hardneck-type garlics.
Wildfire also sends up a curling scape (the plant's flower stalk) — a bonus ingredient in its own right, delicious grilled, pickled, or blended into pesto.
